For the meatballs:
- 500g (1 lb) ground chicken (or turkey)
- 1 cup chopped fresh spinach (or thawed frozen spinach, squeezed dry)
- 1 small onion, finely grated
- 2 cloves garlic, minced
- ½ cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 egg
- Salt & pepper to taste
- ½ tsp paprika (optional)
For the creamy sauce:
- 2 tbsp butter
- 2 tbsp flour
- 1½ cups milk or heavy cream
- ½ cup shredded mozzarella (plus extra for topping)
- ÂĽ cup grated Parmesan
- 1 clove garlic, minced
- Salt & pepper to taste
- Optional: pinch of nutmeg or chili flakes
👩‍🍳 Instructions:
- Preheat the oven to 200°C (400°F).
Lightly grease a baking dish or line it with foil. - Make the meatballs:
In a large bowl, mix together ground chicken, spinach, onion, garlic, breadcrumbs, Parmesan, egg, salt, and pepper.
Form into medium-sized balls and place them on the prepared baking dish. - Bake:
Bake for 18–20 minutes, or until slightly golden and cooked through. - Prepare the creamy sauce:
In a pan, melt butter over medium heat.
Add minced garlic and sauté for 30 seconds.
Whisk in flour and cook for 1 minute, then slowly add milk while whisking to avoid lumps.
Once thickened, stir in Parmesan and mozzarella until smooth. Season with salt, pepper, and nutmeg. - Combine & bake again:
Pour the sauce over the baked meatballs. Sprinkle more mozzarella on top.
Return to the oven and bake for another 10–15 minutes, until the top is golden and bubbly. - Serve hot!
